The Mango Sphere kitchen

Our Story

The Mango Sphere

A restaurant built on memory, spice, and one brass bowl that nobody could explain.

How It Started

Nobody on Maple Street knew what was in the brass bowl by the register.

Just one ripe mango, every morning, no explanation.

Then came the night a stranger tasted the dal and went quiet.

"That's my mother's kitchen," he whispered.

Now the line goes out the door, and the mango never goes missing.

Food is not just what we eat. It is where we come from, who we miss, and how we say welcome without words.

What We Believe

Every decision in our kitchen โ€” from the spices we grind by hand to the way we plate a dish โ€” comes back to one question: does this feel like home?

Scratch, always

No shortcuts. Every sauce, every marinade, every chutney is made from scratch each day. If it cannot be done properly, it does not go on the plate.

Recipes with roots

Our menu draws from the kitchens of India and Southeast Asia โ€” not as a trend, but as a tribute. We cook dishes that carry real history.

A table for everyone

Vegetarian, vegan, gluten-free โ€” we treat dietary needs as an opportunity to cook creatively, not a constraint to work around.

Slow is better

The best things on our menu take hours. We do not rush the dal, the biryani, or the welcome. Patience is an ingredient.

The Chef

Chef Amrit Singh

Amrit grew up between two kitchens โ€” his grandmother's in Amritsar and his aunt's in Kuala Lumpur. Both women cooked without recipes, measuring everything by instinct and smell.

He spent years cooking across India, Malaysia, and the UK before opening Mango Sphere with a single conviction: that the most powerful thing a restaurant can do is make a stranger feel remembered.

The brass bowl was his grandmother's. The mango is for her.

In the Neighbourhood & Beyond

Mango Sphere is part of Maple Street, and Maple Street is part of us. We try to give back in ways that are quiet and consistent.

Local sourcing

We work with local farms and suppliers wherever possible โ€” shorter supply chains mean fresher ingredients and a smaller footprint.

Zero food waste

Surplus prep goes to a local community kitchen every evening. Nothing leaves this building in a bin that could feed someone instead.

Community table

On the last Sunday of every month we host a free community meal. No booking, no charge โ€” just a table, a pot of dal, and whoever turns up.

Come and Sit Down

The best way to understand Mango Sphere is to eat here. We'll have a table ready.
